Hasselback Butternut Squash with Garlic and Rosemary

Inspired by the Hasselback potato that was created in 1953 by Leif Elisson who trained as a chef at Hasselbacken Restaurant in Stockholm. He made thin slices on top of a potato and then added toppings before baking. This version uses Butternut Squash. Can be used as a side dish or main vegetarian dish (substitute butter). I scoured the internet for a recipe and found some good ideas but I prefer using minimal ingredients on vegetables so this is a scaled down version. There are a variety of other topping combination substitutes that can be used.

 

Ingredients

1 large butternut squash

olive oil

salt and pepper

For topping:

3 Tbsp Butter (can use olive oil, but why…)

4 cloves (or 6 or 8) Garlic finely chopped

1 Tbsp Rosemary finely chopped

1 tsp salt

1 tsp pepper

 

Method:

Pre-heat oven 425° F

Line baking pan with parchment paper

 

Peel Butter Nut Squash till orange flesh shows.

 

Cut in half and scoop out seeds and membranes, I like using a grapefruit spoon for this, a melon baller would work too.

 

Brush olive oil on all sides and sprinkle with salt and pepper.

 

Bake in pre-heated oven, cut side down for 20 minutes.

Remove from oven and cool so it will be easier to handle.

Place chopsticks or wooden spoons alongside each squash, this will help guide your knife so you do not slice the squash all the way through.

Slice the squash crosswise making 1/4 inch cuts, taking care not to cut all the way through, so squash remains intact. Baking the squash first makes it easier to make the slices.

 

 

 

In the meantime, combine topping ingredients and place in microwave or pan to melt butter.

Place back in 425° F oven for additional 20 minutes or until squash is soft but not mushy.

Transfer carefully to serving plate.
